hickory wood has a very nice strong smokey flavour to it, more intense than most of the fruit woods like cherry or apple but with a milder profile than mesquite Pitmasters do tend to favour hickory wood because it adds a very  lovely dark color to smoked meats. it has a much stronger flavor than oak but however are very often used in combination together for added flavours as they do burn similar.
